Arugula Salad with Lemon & Pistachio

This peppery arugula salad is packed with lemon flavor to cut through a rich meal. Sweet dried figs are marinated in a lemon dressing to give a subtle hint of sweetness with a lemony kick. Make and store the dressing in a jam jar in the fridge for up to 1 week.

Ingredients

  • 4-5 cups arugula

  • ½ cup fresh basil, chopped

  • ¼ cup shelled unsalted pistachios, chopped

  • ½ cup dried figs, quartered

  • ¼ cup lemon juice

  • Zest of 1 lemon

  • ¼ cup extra virgin olive oil

  • 1 tsp dijon mustard

  • ½ tsp sea salt

  • ¼ tsp black pepper

Preparation

  1. Add arugula, basil, and pistachios to a serving bowl.

  2. In a small jar, add figs, lemon juice, zest, olive oil, mustard, salt, and pepper. Shake to combine. Let sit for 10 minutes.

  3. Pour dressing and figs over the arugula, tossing to combine.

  4. Enjoy!
