Ingredients

  • 1 tbsp olive oil

  • 1 medium yellow onion, roughly chopped

  • 3 cloves garlic, crushed

  • 1 tbsp fresh ginger, chopped

  • 1lb carrots, chopped (5-6 medium carrots)

  • 2 green apples, with peel, cored and chopped

  • 4 cups vegetable stock

  • 1 tbsp apple cider vinegar

  • Sea salt and pepper, to taste

  • 2 tbsp chopped parsley, to garnish

Preparation

  1. Heat oil in a pot over medium heat.

  6. Pour the soup back into the pot, and reheat before serving.

  7. Serve with chopped parsley and apple chips.
