Crazy Beez Honey Cookies

 

On Rosh Hashanah, we enjoy sweet treats to make the new year as sweet as possible. Traditionally, honey is the star ingredient for this holiday. With this experience, use our baking kit to shape and create some delicious and festive Crazy Beez Honey Cookies.

Honey Cookie RECIPE

These cookies are the perfect make-ahead Rosh Hashanah treat to share with your family for a sweet new year! The addition of honey gives these cookies a subtle floral flavor paired with a hint of bright lemon zest.

Ingredients

  • 2 ¾ cup all-purpose flour

  • ¾ tsp baking powder

  • ¼ tsp sea salt

  • 1 cup (2 sticks) unsalted butter, at room temperature (or a non-dairy substitute)

  • ⅓ cup sugar

  • ⅓ cup honey

  • 1 egg

  • 1 tsp vanilla

  • ½ tsp lemon zest

  • Gold sanding sugar (optional)

Preparation

  1. In a medium bowl, whisk the flour, baking powder and sea salt, set aside.

  2. In the bowl of a stand mixer, mix butter and sugar until light and fluffy, about 2-3 minutes.

  3. Add honey, egg, vanilla, and lemon zest to the bowl, mixing until combined.

  4. Add the flour to the butter mixture, mixing on low speed until combined.

  5. Divide the dough in half, rolling each half into a disc, wrapping tightly with plastic wrap, and refrigerate for at least 60 minutes, or overnight.

  6. Preheat the oven to 350°F. Line 2-3 baking trays with parchment paper.

  7. Generously flour each piece of dough and roll out until ¼-inch thick.

  8. With the Crazy Beez Roller, press and roll firmly to transfer the bee pattern. Only roll in one direction. Tip: For best results, it can be helpful to lightly flour the roller between batches.

  9. Use the Crazy Beez Cutter to create honeycomb shaped cookies from the embossed dough.

  10. Place cookies on baking trays, leaving 2 inches between each hexagon. Place trays in the fridge and chill for 20-30 minutes to ensure the cookies keep their shape.

  11. Remove trays from the fridge and bake for 8-10 minutes, or until they begin to turn golden brown. Remove and allow to cool on the tray for 5 minutes. Then, transfer to a wire rack to fully cool.

  1. Have your little ones help to combine the dry ingredients, unwrap the sticks of butter, and crack the egg into a bowl before adding it to the mixture. Older children can scoop and measure flour or sugar too!
