Moroccan Carrot Salad

Ingredients

  • 1lb carrots (5 medium), peeled and chopped

  • ¼ medium red onion, thinly sliced

  • 1 clove garlic, chopped

  • 1 tbsp olive oil

  • ½ tsp paprika

  • ½ tsp cumin

  • ¼ tsp cinnamon

  • ¼ tsp coriander

  • ¼ tsp ginger

  • ¼ tsp turmeric

  • 2 tsp preserved lemon, chopped (or 1 tsp lemon zest)

  • ¼ cup almonds, chopped

  • 2 tbsp fresh parsley, chopped

  • Sea salt and pepper, to taste

Preparation:

  1. Preheat the oven to 400°F. Line a tray with baking paper.

  2. Combine carrots, onion, garlic, olive oil, spices, lemon, salt, and pepper on the tray. Spread in an even layer.

  3. Roast for 20-25 minutes, or until the carrots are tender.

  4. Top with almonds and parsley.
